...A few days later we walked down the same block where we ate the first night, and we saw a man selling fried cockroaches, frogs, grasshoppers, and maggots. People grill meat on skewers like chicken, beef, pork, and shrimp. (Fact: Thailand is the country that exports the most farm-raised shrimp in the world!) They even grill chicken livers and chicken tails. ....

...Bangkok has a wonderful tradition of street food, rivaled only by Mexico as far as I can tell. If you don’t mind some exhaust fumes with your dinner and are willing to pull up a stool next to the chipmunk-sized cockroaches, you can get some damn good grilled satay for a mere 10 baht (30 cents). Or a fat bowl of rice noodle soup, chock-full of fresh basil, chili, bean sprouts, lime, more forms of pork than I know what to do with, and a juicy pair of ping-pong-ball-sized fish balls, which I nonchalantly move to the side (trying hard not to imagine how big the fish they came from must have been)...

...Thai curries have become one of my favorite dishes to cook (and for a while, they were the most aggravating). It has taken me three years to get them right, and along the way I have made many versions that left us all a bit disappointed. These attempts were palatable, and maybe even good, but something was eluding me—that something that made the curries “pop”. However, Angela kept encouraging me (given that Thai curries are one of her favorite things to eat and no restaurants back here in the US can ever seem to get them right). Eventually, I discovered the secret for the perfect curry: achieving a harmonious balance. My strategies may be a bit unconventional, but I hope you’ll find that the end result not only tastes authentic, but may offer some improvements over what you might have had in the past...
