Mojitos are a dime a dozen here in Havana, but some pale in comparison to others. The secret to a great mojito, we learned from the host of our "paladar", is confectioners’ sugar. Here's the recipe from the best mojito we've had yet, from Paladadar la Moneda Cubana in Havana.
• juice of one key lime
• 1 t. confectioner sugar ...
• chopped mint
• 1 shot Havana Club rum
• 1 c. carbonated water
Muddle first 3 ingredients, then add remaining items, stir, and garnish with a sprig of fresh mint.
